With cheese making and consumption dating back to before the Roman Empire, Italian’s are proud of their cheese culture and have over 450 different varieties of cheeses ; each region in Italy produces various specific varieties, many with a protected designation of origin. Although the most well-known Italian cheeses are probably Parmigiano-Reggiano (Parmesan) and mozzarella, Italy has an array of versatile soft and hard cheeses perfect for making the perfectly authentic Italian dish.
