The regions of Italy have for many years favoured their own traditional sauce recipes that have been passed down through generations. When the twentieth century came along, faster methods of transportation quickly moved people from one part of the country to another and introduced them to new tastes and ideas that led to experimentation with different sauces to accompany many pasta shapes.
